This is one of my favorite childhood dishes. I used to think it was too hard to make, but I gave it a try and here it is.

Boil the potatoes until tender. Peel and mash them, season with salt and pepper, then knead until you have a smooth dough.

In a skillet, heat oil and sauté the garlic and onion. Add the yellow chili pepper paste, then add the ground beef. Season with salt and pepper and cook for 15 minutes.

Add the hard-boiled eggs, raisins, and olives. Stir, then turn off the heat and let the filling cool.

With floured hands, knead the potato mixture. Take half of it, shape it into a ball, then flatten it into a thick patty, making a small well in the center with your palm.

Place half of the meat filling in the center, close it up like an empanada, shaping it into an oval. Repeat with the remaining potato and filling.

Heat 1/2 cup of oil in a skillet and fry the two stuffed potatoes, turning every 4 minutes until they are golden brown all over.

Serve now, accompanied by a delicious salsa criolla if you like.
