Steps

Crack egg, add in pepper and salt. Then whisk or beat. Set aside.

Roast eggplant in oven. Then peel off skin.

Place in a plate then gently press with fork. Pour beatin eggs then pour over eggplant.

Heat pan then pour oil. Then fry over low flame. Flip over to cook other side.

When done, remove and serve.
