Place the olive oil, lemon juice, mustard and garlic in a bowl, along with some salt and pepper, whisk up to make a dressing.

Boil the potatoes until cooked. Boil the green beans for a few minutes so that it still has a slight crunch.

Chop and arrange the vegetables on a tray and serve, this salad is great with some roast chicken.
