This recipe came to me in a special way. One night at 2am I heard an awful noise that woke me from a deep rem cycle sleep. Now confused and sleep deprived I ventured towards the noise. I soon found my uncle Ray, hammered drunk in the kitchen. Uncle Ray had 9 small batch bourbon's. He was making a ruckus pushing on the fridge door and screaming at the top of his lungs "THE MAC AND CHEESE!"...I said " Ray shut up there's people trying to sleep, and you have to pull the door for it to open" I got uncle Ray his Mac and cheese, but instead of saying thank you he remarked that it would be better with lobster. Sure enough, Ray was right.

Ingredients

6 to 8 servings
  1. 1/2 cupunsalted butter
  2. 1/2 cupall purpose flour
  3. 4 cupshalf and half or whole milk, heated
  4. 12 ouncesshredded Gruyere cheese
  5. 8 ouncesparmesan cheese
  6. 1 teaspoonground nutmeg
  7. 1 teaspoonsalt
  8. 1 teaspoonfreshly ground black pepper
  9. 1 1/2 poundslobster meat cooked and cut into 1/2 " chunks
  10. 1 (16 ounce)box elbow macaroni, cooked according to package
  11. 1 1/2 cupsseasoned bread crumbs or crushed Ritz crackers

Cooking Instructions

    In a large sauce pan on the stove top over medium-high heat, melt the butter. Remove 2 table spoons of the melted butter into a small bowl and set aside.

    Whisk the flour in with the remaining butter in the pan on the stove top

    Reduce the heat and continue stirring constantly for 2 minutes to make roux

  4. 4

    Stir the hot half and half slowly into the flour mixture. Cook for 2 minutes, stirring occasionally

    Once the milk is thick and smooth, add the Gruyere and parmesan, stir until.cheese melts

    Stir in the nutmeg, salt, pepper, lobster, and Cooked macaroni. Be sure everything is mixed fully then remove from heat

    Add the bread crumbs to the small bowl containing 2 tablespoons of melted butter, whisk to combine

    Preheat smoker to 275°F add maple or apple wood chips

  9. 9

    Pour the lobster macaroni into a disposable aluminum foil pan

  10. 10

    Spread the bread crumbs mixture evenly on top, set the pan on the smoker rack

  11. 11

    Smoke for about an hour, until bubbly and lightly browned on top

    Remove Mac and cheese, let cool slightly, to set, before serving
