
Spicy Candied Bacon

This recipe dates back into the early 1400's when bacon was first invented. It serves 6 to 8 people. I first made it for triathlon runners to.l grab as they were running by the fans. They all grabbed the glass of water instead sominhad to eat 2 pounds of bacon by myself.

Cooking Instructions

Preheat smoker to 275°F and add hickory, maple or apple wood chips
- 2
Place bacon side by side on nonstick grill making sure bacon dose not touch each other.

In small bowl mix together brown sugar and cayenne
- 4
Baste the bacon with 1/4 of the maple syrup
- 5
Sprinkle half of the brown sugar and cayenne evenly on the bacon slices
- 6
Smoke for 1 hour
- 7
Flip bacon slices, add remaining brown sugar cayenne and maple syrup
- 8
Smoke one hour until bacon is crispy firm and bubbling
- 9
Use tongs to remove bacon slices and let cool completely before serving
- 10
Refrigerate left overs for up to one week
