Ingredients

20 minutes
4 to 6 servings
  1. 1 canblack beans - drained and rinsed
  2. 1 cansweet corn - drained and rinsed
  3. 1/4 cupred onion - chopped
  4. 1/4 cupred or orange bell pepper- chopped
  5. 2roma tomatoes - diced
  6. 3-4stems worth of fresh cilantro leaves - chopped
  7. 1/4 tspgarlic powder
  8. 1/4 tspsalt
  9. 1/8 tspblack pepper
  10. 1/8 tspchipotle chile powder
  11. 1/8 tspground cumin
  12. 1/8 tspTajin seasoning
  13. Pinchground coriander
  14. 2 tbspapple cider vinegar
  15. 1 tbspolive oil

Cooking Instructions

20 minutes
  1. 1

    Place all ingredients in medium bowl and stir to combine.

  2. 2

    Cover and refrigerate at least 1 hour. The longer it rests the better the flavors blend.

  3. 3

    Serve with tortilla chips or as a topping for tacos or a southwest style salad. Also makes a good cold side dish.
