Ingredients: 1 can black beans - drained and rinsed; 1 can sweet corn - drained and rinsed; 1/4 cup red onion - chopped; 1/4 cup red or orange bell pepper- chopped; 2 roma tomatoes - diced; 3-4 stems worth of fresh cilantro leaves - chopped; 1/4 tsp garlic powder; 1/4 tsp salt; 1/8 tsp black pepper; 1/8 tsp chipotle chile powder; 1/8 tsp ground cumin; 1/8 tsp Tajin seasoning; Pinch ground coriander; 2 tbsp apple cider vinegar; 1 tbsp olive oil

Ingredients

4 to 6 servings

1 canblack beans - drained and rinsed
1 cansweet corn - drained and rinsed
1/4 cupred onion - chopped
1/4 cupred or orange bell pepper- chopped
2roma tomatoes - diced
3-4stems worth of fresh cilantro leaves - chopped
1/4 tspgarlic powder
1/4 tspsalt
1/8 tspblack pepper
1/8 tspchipotle chile powder
1/8 tspground cumin
1/8 tspTajin seasoning
Pinchground coriander
2 tbspapple cider vinegar
1 tbspolive oil

Cooking Instructions

20 minutes

Place all ingredients in medium bowl and stir to combine.

Cover and refrigerate at least 1 hour. The longer it rests the better the flavors blend.

Serve with tortilla chips or as a topping for tacos or a southwest style salad. Also makes a good cold side dish.

I did not have salsa and did not want to go to the store so i went to the cabinet and came up with this. you can use cilantro if you have it, i did not so i used what i had. i also do not like chunky salsa so if you like chunky salsa you can use regular diced tomato or skip the blending step and juct chop the jalapeno
