I love this salsa. everything is crisp and fresh. the black beans add protein. I tasted it for the first time at a tiny mexican restaurant in california. just so yummy! try it... you'll love it. :positive

Ingredients

  1. 115.5 oz can black beans, drained and rinsed
  2. 110 oz can diced tomatoes and green chilies (I like rotel brand... but tou can use any brand)
  3. 1/2 cupcanned corn kernels
  4. 1bell pepper diced fine (you can use green, red or orange pepper...it doesn't matter)
  5. 3green onions, sliced small
  6. 1/2lime, juice and zest
  7. 1 pinchred pepper flakes
  8. 1 pinchsalt and pepper to taste

Cooking Instructions

  1. 1

    combine all ingredients in a bowl and mix well

  2. 2

    refrigerate atleast 2 hours before serving. I like to make it the day before I'm planning on serving it.

    serve it with your favorite chips as a snack. great as a topper for tacos. or (my favorite) serve it with a simple cheese quesadillas as a meal with a dollop of sour cream...mmmhmmm good.
