Ingredients

Preparation time-15 mins, Cooking time-28hrs
2 servings
  • For Mutton marination
  • 500 gmsMutton on bones
  • 1 cupcurd
  • 1 tspturmeric powder
  • 1 Tbspred chilli powder
  • As Per Taste Salt
  • as per tasteSugar
  • For Curry
  • 2large onions chopped
  • 8-10whole red chilies
  • 1 Tbspgarlic paste
  • 1 Tbspginger grated
  • 1 Tbspred chilli powder
  • 1 tspcoriander seeds
  • 1 tspcumin seeds
  • 1 tspcoriander powder
  • 1 tspcumin powder
  • as required Whole garam masala of cinnamon, cloves, green cardamoms
  • 2-3black cardamoms
  • 1 tspblack pepper powder
  • 2bay leaf
  • as per tasteSalt
  • as requiredMustard oil
  • as required Ghee

Steps

Preparation time-15 mins, Cooking time-28hrs
  1. 1

    Wash the mutton pieces well, Pat fry and add the marination masala of curd, turmeric powder, red chilli powder, salt, sugar and marinate overnight

  2. 2

    Set aside to room temperature and prepare to make the curry

  3. 3

    In a bowl add chopped onions, bay leaf, ginger, garlic, black pepper powder, cinnamon stick, green cardamoms, cloves, cumin seeds, coriander seeds, coriander powder, cumin powder, red chilli powder and add mustard oil. Mix well and apply on the mutton very well

  4. 4

    In a wok heat oil and bring the bowl of mutton marination to the wok to heat on high flame stir for 3-5 mins, reduce the flame and cover to cook for 1 hr. Keep stirring in between so the mutton doesn’t burn

  5. 5

    When oil is released, add 1/2 cup hot water to get your desired consistency and stir well. Set aside when mutton is cooked well

  6. 6

    Plate to enjoy with Rice or Roti
