I made Mutton curry with slow cooking and ideally cooking on charcoal would have given the best taste and texture but I cooked on gas. It was mouthwatering! Slow cooking is the key to this curry

I made Mutton curry with slow cooking and ideally cooking on charcoal would have given the best taste and texture but I cooked on gas. It was mouthwatering! Slow cooking is the key to this curry

Wash the mutton pieces well, Pat fry and add the marination masala of curd, turmeric powder, red chilli powder, salt, sugar and marinate overnight

Set aside to room temperature and prepare to make the curry

In a bowl add chopped onions, bay leaf, ginger, garlic, black pepper powder, cinnamon stick, green cardamoms, cloves, cumin seeds, coriander seeds, coriander powder, cumin powder, red chilli powder and add mustard oil. Mix well and apply on the mutton very well

In a wok heat oil and bring the bowl of mutton marination to the wok to heat on high flame stir for 3-5 mins, reduce the flame and cover to cook for 1 hr. Keep stirring in between so the mutton doesn’t burn

When oil is released, add 1/2 cup hot water to get your desired consistency and stir well. Set aside when mutton is cooked well

Plate to enjoy with Rice or Roti
