First, wash the dal and rice 4 to 5 times with water to clean them well, then soak them in water for 6 to 7 hours. Also, wash and soak the fenugreek seeds.

Soak all items separately, and once soaked, drain the water and grind them in a blender jar. In summer, the fermentation happens quickly.

Wash the potatoes, boil them, peel them, and mash them. Also, mash the paneer. Then, heat a pan on the stove and add cooking oil.

Once the oil is hot, add asafoetida and turmeric, then add tomatoes. After that, add the potatoes and paneer and stir well.

After stirring, add red chili powder, garam masala, amchur powder, and salt to taste. Stir well, then add cilantro and turn off the heat.

The filling for the dosa is ready.

For the chutney, remove the husk from the coconut, break it, and extract the flesh.

Wash the coconut flesh well, cut it into small pieces, and put it in a blender jar. Add cumin seeds, salt, yogurt, cilantro, and salt, then blend. The coconut chutney is now ready.

For the sambar, wash the toor dal well, then put it in a pressure cooker. Peel and wash the pumpkin and bottle gourd, then add them to the cooker along with chopped tomatoes.

After adding everything, add water and salt to taste, then add turmeric and sambar masala. Close the pressure cooker lid and cook for about 5 to 6 whistles. In a pan, add a teaspoon of cooking oil and mustard seeds. Once the mustard seeds start popping, turn off the heat. Add the mustard seeds to the sambar; they add great flavor.

Once the steam is released, open the lid, stir well, and add amchur powder. Stir again. The sambar is ready. Garnish with cilantro and serve.

The dosa batter has fermented well. Now, add salt and a little water, then whisk well.

Heat a griddle on the stove, sprinkle some water, and spread a ladleful of batter on the griddle.

The batter is spread on the griddle. See, the dosa is cooking well.

Now, apply butter or ghee on the dosa, then add the paneer masala mixture. Add onions, top with cilantro, and shape as desired.

The Paneer Masala Dosa is ready. Serve it with sambar and chutney.
