"Bettarazuke" with sweet sake

Here is an easy Japanese style pickle recipe.
You need about 200-300g of vegetables of your choice. Drain thoroughly beforehand.
If you eat it after one to two hours after soaking, it's like a salad.
If you eat it after 12 hours to one day, it's like "Bettarazuke" (Pickled Japanese white radish with sugar, salt and sake)
You may add drops of lemon juice for additional flavor.

Cut the Japanese white radish into quarter-rounds, 5-6mm thick. Cut the cucumber in diagonal slices, 5-6mm thick too. Put them in plastic bag, add salt and massage. Let it sit for 15 minutes.

Drain 1 and put it in a Ziploc. Add sweet sake and salt. Mix them and leave it in the fridge for about a half day.
