Finely chop all the vegetables. Heat oil in a pan, then add mustard seeds, cumin seeds, and curry leaves. Sauté the onion until it turns slightly pink. Add all the chopped vegetables and dry spices. Mix well and cook for 4-5 minutes.

Add the vermicelli and roast for 2 minutes. Pour in 1 1/2 cups water (about 350 ml).

Cover and cook for 10 minutes until the vermicelli is fluffy and cooked through, but not mushy.

Serve the savory, delicious sevai hot. It makes a great breakfast option.
