Bubble and squeak

A traditional British way of using up leftover mashed potato. Nice enough that it's worth making extra just to make this.
If no spinach, also works well with cabbage (which is more traditional), Brussel sprouts, cavolo nero, kale etc.
(Often served topped with a fried egg.)

Steps

Shred spinach coarsely, and wilt in half a cup of water over medium heat

Finely slice leek and soften in 1 tbsp oil
- 3
Grind coriander seeds with paprika in pestle and mortar

Beat eggs in a cup. In a big bowl, combine all ingredients, season, and mix by hand until well combined.

Using a 3-inch cookie cutter (or similar), form into approx 12 patties about 1cm thick. Season again, and spray with a single spray of cooking oil.
Cook at 200c (fan) for 25 minutes. The edges and corners should be slightly browned.

Serve with e.g. haricot beans and baked beans
