Cook your pearl couscous in enough boiling water to about 85% and add a tsp of vegetable oil. Strain in a colander and keep aside.

Fry your Irish potatoes, slice the onion and keep aside. Heat up oil in a pot and add your onion, fry for 3mins. Add the spices and stir.

Add peppers, fry for few minutes. Then add the cooked couscous and stir everything together.

Add seasoning, salt and fried potatoes. Stir fry for 2-4mins until everything is incorporated.

Then, add little hot water, cover and cook until the water dries up. Serve hot with cucumber and enjoy
