This simple and easy one is my way of doing it. You can omit Green chillies if desired. Instead increase the amount of Red Chilli powder. Either ways it tastes great. Not only that, you can increase the heat to a high after done and cook further by continuously stirring it if you wish to have a crispier Bhindi. But you have to be careful and keep a constant vigil on it. Otherwise it might get burnt. Stirring is important and in this way, you will get a bit more crispier Bhindi. Therefore with this one single recipe, you get two different varieties of Okra Fry. One a normal one, juicy and tender Okra Fry and the other a bit on the crispier side Okra Fry.

Ingredients

25-30 minutes
4-5 servings
  • 400 gmthinly sliced Okra
  • 1 tspGinger garlic paste
  • 2 tspRed Chilli powder
  • 1/2 tspTurmeric powder
  • 1 tspCoriander powder
  • 2 sprigsCurry Leaves
  • 2-3slit or chopped Green Chillies
  • 1 tspSalt or to taste

Steps

25-30 minutes
  1. 1

    This is a simple recipe with equally simple pantry ingredients. Heat Oil and add Curry Leaves at first. Next add slit Green chillies and the rest of the spices excluding Salt. It should be added later on. Okra is sticky by nature. If Salt is added to it in the beginning, it will leave water due to which Okra gets sticky and becomes a bit difficult to cook. So never add Salt to it. Add it just a few minutes before taking it off the heat.

    Keep stirring in between at regular intervals and cover it well. Keep the heat on a low only. It gets done within 20 minutes. And just before you decide to take it off the heat, add salt according to taste and garnish with freshly chopped Coriander Leaves. Enjoy your warm family mealtimes with this super comfort food. You will definitely relish its lovely aromatic flavours. Curry Leaves, Green chillies and Ginger garlic paste lend it a unique aroma and flavour.

    Serve hot alongside homemade fluffy Rotis or Chapatis or Parathas or even Pooris. It tastes awesome with all. It also tastes equally delicious with simple boiled Rice. Yum!
