Cooking Instructions

For the best results, use a powerful blender or food processor. Start by washing the strawberries, removing the green tops, and cutting them in half. Add them to the blender jar.

Add salt, the peeled half cucumber, garlic, a splash of apple cider vinegar (not too much—you can adjust at the end), and a generous drizzle of extra virgin olive oil.

Blend well, then add very cold water to reach your desired consistency, depending on how thick you want your gazpacho. Taste and adjust the salt and vinegar as needed. Chill in the refrigerator for at least one hour.

When serving, you can add a couple of ice cubes.

I do recommend, however, using only a small amount of the onion and garlic. I also like to squeeze some lemon onto this soup before serving.
