Pork Cheeks in Red Wine (Pressure Cooker)

This dish, especially served with some French fries, is one of my favorites. It's easy to make, doesn't require much cooking experience, and turns out amazing.

This dish, especially served with some French fries, is one of my favorites. It's easy to make, doesn't require much cooking experience, and turns out amazing.
Steps
- 1
Season the pork cheeks with salt and pepper, dredge them in flour, and brown them in the pressure cooker with olive oil. Once browned, remove and set aside. In the same pot, sauté the vegetables along with the cinnamon stick and bay leaves until softened.
- 2
Once the vegetables are soft, return the pork cheeks and any juices to the pot. Add the red wine and let the alcohol evaporate. Pour in the beef broth. Close the pressure cooker and cook for 40 minutes. After this time, carefully remove the meat, discard the bay leaves and cinnamon stick, and blend the vegetables to make the sauce.
- 3
Return the pork cheeks to the pot and cover with the sauce. Simmer over medium-low heat for another 10 minutes to reduce the sauce, stirring occasionally to prevent sticking. Serve hot.
(If the sauce is too thin, you can thicken it with cornstarch dissolved in cold water.)
