Fresh 'Corn-in' Hoe Cakes (fried cornbread w/corn)

Whisk together all dry ingredients in a bowl

In separate bowl, mix together other ingredients with exception to oil and butter.

In large bowl, combine all ingredients. Blend well to form batter

Preheat oil and butter in skillet

Drop batter into hot skillet, by measurements of 1TBS. (Can go as large as 1/4C, but may be harder to control the cook for larger patties) For heaping 1TBS drops, cook about 1min each side, or as long as 2 min each side. Should be golden and cooked through. May appear dark brown or black on edges. Larger drops may call for longer cook times, being 2-3 minutes each side. Be sure to flip after recommended time, cook other side for same time, or til done.

Remove from skillet when cooked through, and place into dish, cover with towel, or serve soon.
