I made this cake with a tangy, savory twist instead of the usual sweet flavor. Methi Cake is a bit like Handvo. This cake tastes delicious whether served warm or cold.

Gather all the ingredients. In a bowl, combine oil and milk and mix well.

Add the green masala paste, turmeric, and sugar. Mix well, then add the semolina.

Add the chopped onion, chickpea flour, salt, baking powder, and baking soda. Mix thoroughly and beat for 5–7 minutes.

Add the green peas, chopped cashews and almonds, and chopped fenugreek leaves. Mix well. Grease a cake pan with oil, pour in the methi batter, and tap to level. Sprinkle more chopped nuts and grated coconut on top.

Preheat the oven to 350°F (180°C) for 10 minutes. Place the methi cake batter in the oven and bake at 350°F (180°C) for 20 minutes. Insert a toothpick to check if it’s done; if not, bake for another 5 minutes.
