Ingredients

40 minutes
4 people
  • 2 tablespoonsolive oil
  • 1 poundground pork
  • 1diced onion
  • 2chopped carrots
  • Pinchkosher salt
  • 1 canpineapple chunks (14 ounces)
  • 4 tablespoonsbarbecue sauce
  • 1 teaspoonground ginger
  • 2 cupschopped green, red & yellow bell peppers
  • 2 tablespoonsSriracha sauce

Steps

40 minutes
  1. 1

    Heat olive oil over medium heat

  2. 2

    Add carrots, onion, pork and kosher salt

    Cook until pork is done

  4. 4

    Stir in pineapple chunks with juice, ginger, barbecue sauce and bell peppers

  5. 5

    Bring to a boil, simmer for 10 minutes, then add Sriracha sauce and salt to taste

  6. 6

    Serve over rice & enjoy!
