Ingredients

40 minutes
4 people
  1. 2 tablespoonsolive oil
  2. 1 poundground pork
  3. 1diced onion
  4. 2chopped carrots
  5. Pinchkosher salt
  6. 1 canpineapple chunks (14 ounces)
  7. 4 tablespoonsbarbecue sauce
  8. 1 teaspoonground ginger
  9. 2 cupschopped green, red & yellow bell peppers
  10. 2 tablespoonsSriracha sauce

Cooking Instructions

40 minutes

    Heat olive oil over medium heat

  2. 2

    Add carrots, onion, pork and kosher salt

  3. 3

    Cook until pork is done

  4. 4

    Stir in pineapple chunks with juice, ginger, barbecue sauce and bell peppers

  5. 5

    Bring to a boil, simmer for 10 minutes, then add Sriracha sauce and salt to taste

  6. 6

    Serve over rice & enjoy!
