Make a fine paste of 1 Tbsp Black mustard seeds and 3-4 green chillies.

In a pan heat up 2 Tbsp Mustard oil,keep the flame on medium.
Add in 2 dried Red Chillies 1 Tsp Panchphoron (Bengali 5 spice) and saute for a minute. - 3
Next add in the onion and saute until soft and caramelised. Add the Potato wedges and Tomato pieces and give a stir.Add in 1 Tsp Salt (to taste) and 1/4 Tsp Turmeric powder,give a good mix.Cover and cook in low flame for 4-5 minutes or until tomatoes are soft and juicy.

Next add in the mustard paste and give a good stir until everything is well combined.

Add in 1½ cup of lukewarm water, stir, mix,cover and cook for 5-7 minutes.
Finally add in chopped coriander leaves and 2-3 slitted green chillies,give a final stir cover and turn off the flame. - 6
Bengali style tangy Green Tomato curry with mustard sauce is ready.
