Prep the vegetables, peel your onion and potatoes and roughly quarter. If using good carrots leave skin on but in my case I used old carrots that would otherwise have been thrown away so i peeled these to remove any bad bits. Place everything including your carcuss into a pot. Add a few sprigs of thyme and bay leaves. Season verll

Cover with water and bring to a boil and simmer for 1 hour. Add a chicken stock in the last 10 minutes.

Remove your bones, bay leaves and thyme springs. Use broth as is or as a stock base for soups, risottos, pasta or other dishes. you can fresh this broth as well to use later.
