Tzatziki

Tzatziki is a dip or sauce found in the cuisines of Southeast Europe and the Middle East. It is made of strained yoghurt or hung curd mixed with cucumbers, garlic, salt, olive oil, lemon juice and herbs such as dill, mint, parsley and thyme. It is a great side dish served with starters in a party or a get-together.

Always use thick yoghurt or hung curd for this recipe. It gives better results. Use the curd which is not sour. Grate and squeeze the cucumber to remove the excess water from it.

Take a bowl and add hung curd, cucumber, lemon juice, olive oil, garlic, salt and dill leaves. Mix everything well. Cover and keep it in the refrigerator until serving time.

Serve tzatziki chilled with lavash, nachos, crackers, chips or other starters as a dip.
