Summer Picnic or kids party mini Chicken and cheese quiche

I made a large cheese and tomato quiche for a family picnic and used the excess pastry offcuts to make mini quiches for my little girl. Here

Roll out pastry to desired thickness and select your cookie cutter size. TIP - use a slightly bigger cutter than needed. I am using a muffin tray so I will use the largest cutter I have. I do this to allow for enough pastry at the sides of the case. I

Begin.cutting and lining the muffin tray.

Prepare your stuffings. I chopped slices of chicken and cubed my cheese. You could try this with ham, tomato, leftovers or other veg.

Add the chopped chicken slices to each case and top with cubes of cheese.

Beat together your eggs and a splash of milk and gently pour into each cup. Season. I find using a jug helps reduce mess for this fiddly part. TIP- when beating your eggs, run your fork through a few times to make sure all your whites have broken down. If there is a large clump of white in the mixture these will be difficult to control when you pour and can cause you to accidentally over full.

Bake in a preheated oven at 180c fan for 20 minutes. Allow to cool completely before packing for your picnic.
