Kulcha is a popular Indian flat bread from north India, especially Punjab. They are very famous in amritsar and Delhi. But the best kulchas are made in amritsar. These soft textured kulcha Are easy to prepare and taste yum. they can be made in a tava. This Punjabi Kulcha is very soft and lattice in eating. These kulchas are made from the all purpose flour. Yeast is not used in the leavening of this bread unlike naan. Without yeast, this kulcha has become very soft. Kulcha Is often served with Punjabi chole or with amritsari chole. It can also be had warm with some tea or coffee.

First in a large bowl add all purpose flour, salt, sugar powder, ghee, yogurt, baking powder, baking soda and a little water to make a soft flour. Knead the flour until it becomes elastic streching. Then spread oil the dough and let it rest for 1 hour.

Now after resting the dough, knead the dough once again to smooth it. Then make a loaf of this dough.

Then grease rolling pin and Patli with oil and weave a like thick roti and spread little water on this kulcha. Then after apply black sesame seeds on top and apply coriander leaves on it.

Now heat a tava pan on a slow gas flame, turn the kulcha on both sides with a water paddle and place it on a tava pan over medium gas flame. Now put a few drops of water on all four sides of the kulcha on the griddle and fry it. (Water adds steam on all four sides of the kulcha on the griddle and the kulcha heats up quickly.)

Now apply butter on both sides and fry on medium gas flame.

Now the soft Punjabi Kulcha is ready to eat. Serve this Punjabi kulcha with hot sezwan chutney. I have served this Punjabi kulcha with sezwan chutney, onion salad and masala buttermilk.
