First, lightly salt the meat and brown it in a pan with oil.

Meanwhile, cut the peppers into strips, clean the artichokes, trim the ends of the green beans, and cut them into pieces.

You have two options: either finish browning the meat and set it aside on a plate, or finish browning the meat while sautéing the vegetables. I went with the second option because I was in a hurry and I'm used to it. Sauté for another 5 minutes.

Meanwhile, slice the garlic cloves thickly and grate the tomatoes.

Add the garlic and sauté for another couple of minutes. Then add the grated tomato with a pinch of salt. Mix and cook for another 5 minutes.

Add twice the volume of water as the amount of rice you'll use later. In my case, it was 12 cups. Turn up the heat and, when it boils, add salt and food coloring. Let it dissolve. Taste and adjust seasoning if needed.

Add the measured rice, spread it evenly, and increase the heat to cook at a boil for 5 minutes.

Then lower the heat and cook over medium heat for another 10 minutes.

If you see the liquid is running low, you can cover with aluminum foil and let it rest for about 5 minutes. This also helps finish cooking the top layer of rice. If you're making a smaller amount, you won't have as much trouble with uneven cooking.
