Soak Urad Dal for 3-4 hrs, drain and add to blender, adding 3-4 Tbsp chilled water blend smooth. Taste doneness by taking a small ball and dropping it into water. If it soaks further blending is needed. If it floats it’s done, set aside and add to a mixing bowl

In the mixing bowl with yo your clean hands beat for 2-4 mins, then add finely chopped cabbage, chopped onions, chopped coriander leaves, chopped curry leaves, chopped green chillies, chopped ginger, black pepper, Hing, rice flour, baking soda and mix well, add salt and mix well again

In a wok heat adequate oil and wet your palms well, take a ball and press, make a hole in the centre with your thumb, gently drop into the hot oil, add one more and fry on medium flame half and set aside to fry back once all are half done.

Frying should be done twice. Once half done and then just before serving the finally fry until golden in colour

Set aside once done and plate

Plate with traditional coconut chutney, enjoy 😊
