Almost 5 years back I visited my aunt's place in Faridabad. I was there for 3 days and she used to make special dishes three times a day! Their family is vegetarian so all meal were vegetable and lentils based. One evening it was raining and we couldn't buy any vegetables so she made this recipe with potatoes, tomatoes and onion. She made it very simply and it was ready in minutes. Also, it tasted amazing with pyaz kachori she made along with this. Here, I am sharing her recipe of Aloo Jhol. Ingredients

30 minutes
4 servings
  • 4potatoes
  • 2tomatoes
  • 2onions
  • 1 tbspGinger garlic paste (optional)
  • 1/2 tspFenugreek seeds
  • 1 tbspChilli powder
  • 1 tablespoonCoriander powder
  • 1/2 teaspoonTurmeric powder
  • 1 teaspoonGaram masala powder
  • as requiredOil for tadka
  • as requiredSalt as per taste
  • as requiredCoriander leaves for garnish

Steps

30 minutes
  1. 1

    Peel,wash and cut potatoes in cube

  2. 2

    Chop onion and tomatoes

  3. 3

    In a pressure cooker heat oil and put Fenugreek seeds

  4. 4

    After it gets brown add onion and fry for 2-3 minutes, add ginger garlic paste and fry nicely

  5. 5

    Add tomatoes and saute it for 3-4 minutes or till it gets mushy

  6. 6

    Add all powder spices except for garam masala and mix it for a minute

  7. 7

    Add potatoes, give a quick mix and add 4 cups of water and add salt

  8. 8

    Cover the lid and cook for 3 whistle

  9. 9

    Let the pressure release and open the lid. Mash some potatoes with the back of the ladle, it will make the gravy thicker

  10. 10

    Switch on the flame and add garam masala let it boil then switch off the flame

  11. 11

    Garnish with coriander leaves and serve hot with poori/ roti/kachori/ rice

  12. 12

    Tip: adjust water quantity for desirable consistency
