First, prepare the syrup. Heat the water and dissolve the sugar. Add the lemon juice and cinnamon stick. Once it boils for 5 minutes, remove from heat and stir in the honey. Let the syrup cool completely.

Add the sugar and breadcrumbs to the walnuts. Mix well, then add the cinnamon, ground cloves, and citrus zests.

Keep the phyllo dough covered with a damp towel. Brush a baking pan with butter. Layer the first 3 sheets of phyllo, brushing each one well with butter. Sprinkle some of the walnut filling over the top sheet. Cover with another sheet of phyllo, brushing it with butter. Continue this process for a total of 12 sheets: 3 sheets on the bottom, alternating filling and phyllo for the next 6 sheets, and finish with the last 3 sheets on top.

Fold the edges inward and brush well with butter. Cut the baklava diagonally into diamond shapes. Place a whole clove in the center of each piece. Bake in a preheated oven at 350°F (180°C) for about 45-50 minutes, or at 340°F (170°C) with convection. As soon as it comes out hot from the oven, gradually pour the cooled syrup over the baklava with a ladle. Let it soak up the syrup for at least 2 hours.
