Rinse the dal and soak it for 6-7 hours. Drain the water, then blend the dal with ginger and green chilies in a mixer, using as little water as possible.

Add sugar, oil, and salt to the dal paste and whisk until the mixture is soft and fluffy. Heat oil in a deep pan.

Wet your hands, shape the dal mixture into flat patties, and carefully drop them into the hot oil. Fry on medium heat until golden on both sides, then remove.

In a bowl, mix water with asafoetida. Soak the fried bhallas in this water for 30 minutes.

Whisk the yogurt with sugar until smooth using a hand whisk.

Gently press the bhallas between your palms to remove excess water and place them on a plate. Top with sweetened yogurt, black salt, chili powder, and cumin powder.

Drizzle cilantro-mint chutney and tamarind sweet chutney on top.

Sprinkle with fine sev and enjoy your Dahi Bhalla Chaat.
