I love this cake.. it's amazing as a mid day snack, or even for the lunch box for kids too, mildly sweetened, loaded with cashew nuts, tutti frutti.. The crunch of the nuts is just perfect to give a nice headway to the day...!!

1 cupall-purpose flour
1/3 cuprefined oil
1 tspbaking powder
1/4 tspbaking soda
1 pinchsalt
1/3 cuppowdered sugar
1/2 cupthick curd
1/4 cupmilk
1 tspvanilla extract
as required cashew nuts, tutti frutti

Take a bowl, mix all the dry ingredients together, sieve them through & keep aside,

In another bowl, whisk all the wet ingredients till light,

Now gently mix dry ingredients with whisked wet ingredients until well incorporated, do not over mix..

Fold in cashew nuts& tutti frutti in to the cake batter, pour the batter in to greased tin, bake it at 180 c for 40 minutes.and your done..!
