Wash tamarind 2 times, soak tamarind in 1 cup of water for 10-15mins.

Mash well to extract juice, once strain well, take a pan and tamarind juice let it boil for 2-3mins, add 1/4 cup of water, if it reduce

Add sugar/jaggery mix well, add kashmiri red chilies powder, black pepper powder,roasted cumin & coriander powder mix well, salt, black salt simmer for 5-7mins till thick

Remove from fire, let it cool, garnish with finely chopped ginger, green chillies, mint & coriander leaves and serve with simple cabbage salad

Tip: store in a bottle in the refrigerator, don't add any garnish.
