Even though this patty is simple, it's one of my favorites—not because of the ingredients, but because of the story behind it. This was one of the few battles my mom won during my childhood. I remember that as a child, I hated eating; every mealtime was a struggle, always with tears and long negotiations just to get me to eat even a little. This is one of the few foods that didn’t make me feel anxious or upset.
