Heat 1 tbsp ghee in a pan, and add cumin seeds, green chilies, and chopped ginger. Saute 1 min. Add potato. Add all powdered spices and salt. Mux well and cook on low flame for 2-3minutes.Put off the heat and let it cool.

In a mixing bowl, take maida. Add other ingredients and make a hard dough. Leave for 15 minutes.

In a bowl take ghee and maida, mix well and prepare a paste for layering.

Now divide the dough into 8 equal portions and roll into 8 thin pooris.

Divide ghee-maida paste into 8 equal portions. Now take one poori, spread 1 part of ghee -maida paste over poori. Sprinkle 1 tsp maida over the paste.

Put another poori on the first poori. Repeat the process as we did in the first case. Do the same process with all 8 pooris.

Roll tightly the pooris into a log-like structure. Cut the log into 8 equal parts. Roll each portion into a poori. Shape the poori into a square after cutting the sides.

Take 1 tbsp of stuffing, put it on one square piece, and fold it, giving the shape of a triangle. Prepare all puff patties.

Heat oil.Fry the puff patties on low heat till light golden.

Serve. Enjoy.
