Steps

To make green chutney

Take all ingredients under the green chutney section in a mixer jar and grind it to a fine paste. Keep smooth and somewhat thin consistency. Keep aside.

For making potato masala

Peeland mash boiled potatoes. Add salt, green chili, coriander, red chilli powder, turmeric, lemon juice, and hing. Do tempering by using ingredients under the tempering section.

Mix well everything. Make balls for vada, according to the size of your pav.

In a bowl take gram flour. Add salt, and red chilli powder, and hing mix well. Now add water to make a thick batter. The batter should be of dropping Consistency so it will well coats the vada.

Heat oil in a pan. Put some potato vada in the batter deep properly. Then put it into oil and deep fried it till light pink in color. Do fry all the vadas in batches.

Assembling vadapav.

Heat a griddle or nonstick pan. Add in oil/butter. Make two halves of pav. In oil add garlic chutney, saute it. (Very low flame other wise chutney will be burnt). Put two halves of a pav roast properly on both sides. Put vada on one side, cover with other half of pav. Press gently. Serve hot with green chutney and ketchup. Enjoy.
