Cut the cod into pieces. Sprinkle with salt, pepper, garlic, and parsley. Let marinate for 1 hour.

After marinating, coat the fish first in flour, then in beaten egg, and finally in breadcrumbs.

Press firmly so the coating sticks well to the fish.

Fry in batches and set aside in a warm place on paper towels to drain.

Serve the cod with the sauce and boiled potatoes cooked in salted water with bay leaf, drizzled with extra virgin olive oil.
