Green beans in tomato sauce

A Greek dish originally called "fasolakia lathera" - a very simple yet tasty dish. In the beginning of cooking I thought there was no chance anyone in my household was even going to touch it but it was all happily eaten up! 😊

Start with roasting potatoes (or cook them in the sauce for 20 minutes after step 2).
Cut potatoes into quarters and toss in some oil and a bit of salt and pepper. Roast in oven at 225 degrees for about 30 minutes. - 2
Chop and fry onion and garlic in oil for 5 minutes. Add green beans (cut up to 3cm). Fry for another few minutes and add tomatoes.

Simmer for few minutes, add roasted potatoes and serve 😋
