Ever since I was a child, my mom often made some kind of soup for us—sometimes beef, chicken, Tlalpeño, or Xóchitl. I love them all.

Ever since I was a child, my mom often made some kind of soup for us—sometimes beef, chicken, Tlalpeño, or Xóchitl. I love them all.

Place the beef, half onion, bay leaves, bouillon or salt, and peppercorns in a pot and cover with water. Bring to a boil.

Cook for about 30 minutes in a pressure cooker. Once the meat is cooked, remove it from the pot.

Cut the vegetables and add them to the broth. I like to add the zucchini when the other vegetables are almost done.

When the vegetables are cooked, return the meat to the pot and simmer for 10 more minutes.

Serve with chopped onion, cilantro, lime, or even some hot sauce, as you like.
