Let's make momos with a twist this Independence Day. Make momos as well as your Independence Day much more independent and colorful. I made this for my kid's tiffin on his school's pre-Independence Day celebration. What about you......???

In a bowl add maida, salt. Mix it then add water little by little and Knead it into a soft dough. Cover the dough with a damp cloth and rest it for about half an hour.

Then divide the dough into 3 equal portions and put orange food colour in one portion & green in another. Mix them well by kneeding the dough properly. Leave the third portion as it is. You will get 3 different colours.

Rest it for some more time by again covering it with a wet cloth. Now for chicken filling, first take the chicken pieces & cut it into small chunks. Now put it in a grinder. Then add chopped onion, chopped spring onion, green chilli sauce, chopped green chillies, ginger-garlic paste, salt, 1 tsp oil & grind everything well. You will notice that the chicken filling has now become lumpy...

First take the white ball and roll it into a big thin chapati. Now place a circular vati or bowl over it & give a gentle pressure. Repeat the same with the remaining chapati round. Now gently remove the circles from the chapati. It will frm small puri-like. Keep them aside.

Now repeat the same process withthe rest of the 2 colours, orange/saffron and green.

Now take a smaller circle and place the filling in the centre as shown in the pic & give them your desired shapes. Repeat the same process with the rest of the colours.

Now you can either put them into a steamer & steam it for 10 to 12 mins. or you can put them into a strainer. Now steam the momos using double-boiler method for 12 mins. I.e boil some water in a big bowl then place the strainer over it & cover it. Keep the flame low and steam it.

After 10 to 12 mins., just switch off the flame, remove the momos on a platter & serve hot with some schezwan chutney or with any ketchup of your choice.
