Bakra Eid Special Oven Roasted Raan with Sumac (non-veg)

This lip-smacking Non-Veg dish that's baked or roasted to perfection is an instant hit with my family. Every Bakra Eid, this is a must and in this particular one, I have generously used Sumac which is a Middle Eastern spice blend that's mildly tangy (not as much as Lemon) with a lovely reddish pink colour.
This goes well with any Indian Bread and Salad.
Easy and simple. It can even be roasted on a Charcoal Barbecue for that perfect smoky effect. I have already uploaded Sikandari Raan here on this platform earlier which is a very well-known dish as well that's done with Lamb Leg or Raan. I shared a picture of the Middle Eastern spice Sumac here for a clear insight into it.

In this particular version of roasted Raan in an oven, I have used simple spices that are easily available in every Indian kitchen and pantry. That's it. Nothing much fancy or complicated at all. The only glitch is the time required for this. It takes a few hours to be fully done. Relish it with your loved ones and friends alike on weekends or special holidays or even a vacation. You will love its melt-in-mouth texture and flavour as well.

Ingredients

6-7 servings
  • 1Lamb Leg or Raan
  • 2-3 tbspGinger garlic paste
  • 2-3 tbspOil or Ghee
  • 2 tbspRed Chilli powder
  • 1 tbspCumin powder roasted
  • 1 tbspCoriander powder roasted
  • 2-3 tbspSumac
  • 1 tspGaram Masala
  • 2 tbspSalt
  • 2-3 tbspGreen Masala paste
  • 2 tbspRaw Papaya paste (optional)

    The first thing to be done is clean the raan and make slits all along. It is advisable to do it as it will help in getting a juicy and a succulent raan after grilling. Papaya paste helps in cooking it perfectly. But I didn't use it in this one. Marinate it for one whole day. It's an important part of this amazing dish. I have marinated it for a full day so that the meat is succulent and juicy. For the Green Masala, grind 3-4 Green Chillies, and 1 bunch of Mint and Coriander Leaves each.

    Oven Roasted Lamb Leg or Raan

    Baste it with Oil before grilling. Preheat the oven to the maximum. You can straight away roast it now. Or midway through, use aluminum foil to wrap it up fully in order to prevent it from getting burnt.

    Bake it for nearly 2 or 3 hours as required. Keep checking after every 40 minutes and baste with little Oil or Butter or Ghee each time.
