Shrimp fried rice

Shrimp fried rice is my favorite fried rice recipe since childhood. Key ingredient in this recipe is the shrimp paste which you can effortlessly make by frying the shrimp head. It’s fully contained with all of shrimp flavor and fragrance which are impossible to resist!

Prepare all ingredients.

In a saucepan, heat the vegetable oil with medium-high heat. Fry garlic until it becomes fragrant. Add shrimp to the pan in one layer. Cook each side for 30 - 45 sec. Season with oyster sauce, soy sauce and black pepper. Mixed well. Transfer the cooked shrimp to a bowl. Transfer the shrimp paste to a small bowl for making shrimp fried rice later.

In the same saucepan, heat vegetable oil with medium-high heat. Add onion and cook until it turns translucent. Add egg and cook until scrambled. Add leftover cooked rice, shrimp paste and other seasoning sauce. Mix well for 1-2 min. Finally, sprinkle the green onion and mix well before you turn off the heat. Transfer to a serving platter.

To serve, add cooked shrimp to a serving platter.
