This is my take on eggplant parmesan and one of our family favorites. We love it as a side dish, snack or main course.

This is my take on eggplant parmesan and one of our family favorites. We love it as a side dish, snack or main course.
Steps

Slice eggplant in 1/2 inch rounds.

Brush or spray oil in fry pan. Heat and sautee eggplant slices until browned and soft.

Brush or spray baking tray with oil. Transfer sauteed eggplant slices to oiled tray.

Preheat oven to 400 degrees Farenheit. Top each piece of of eggplant with a generous tablespoonful or so of marinara sauce, spreading it with back of spoon to cover top of eggplant pieces. Top with a pinch of dried basil if desired and a couple tablespoons of shredded cheese.

Bake the eggplant for 10 to 15 minutes at 400 F depending on your oven. If you like it a touch charred on top, you can broil on high for a minute or two. Serve warm and enjoy!
