Nectarine and Barattiere Cucumber Salad

Today marks the end of vacation and a return to work, feeling refreshed and full of new ideas. I’ve had a good rest. Today, I’m bringing a fresh and light salad packed with seasonal fruit for lunch. The surprise is finding these barattiere cucumbers from Puglia in my region—they’re lighter and easier to digest. I really enjoy the sweet and savory contrasts in this salad. Nectarine and Barattiere Cucumber Salad

Gather all your ingredients.

Start by cleaning the barattiere cucumbers. Cut them in half, then into quarters.

Remove the skin and seeds. Cut into cubes and add to the salad greens. Wash and clean the nectarines.

Cut the nectarines into pieces and add them to the other ingredients. Drizzle with olive oil, add salt and a few grinds of pepper. Toss well and serve.
