Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water

In a bowl, combine the chicken strips with oregano, cumin, paprika, onion powder, minced garlic, ginger, salt, and pepper. Mix well and let it marinate for at least 15 minutes (or up to an hour if you have time)

Heat a splash of oil in a skillet over medium-high heat. Cook the marinated chicken until browned and cooked through (5–7 minutes). Remove chicken from the pan and set aside

In the same pan, heat a tablespoon of butter and sauté the onions and bell peppers until softened and slightly charred for that fajita-style flavor (about 5 minutes)

Turn down the heat to medium. Add the cream (or milk and a bit of cheese if you prefer). Stir to combine, seasoning with extra salt, pepper, and paprika if needed. If the sauce is too thick, loosen it with the reserved pasta water (incorporating a little at a time)

Add cooked chicken and pasta back to the pan and toss until well coated in the creamy fajita sauce
