My mother Teresa used to make these whenever we had leftover rice or rice stew, and I loved them because she always added fresh scallions! I had some leftover rice, and since we know how to make something hearty out of just a little, here’s the recipe for these scallion rice fritters, just like Teresa called them. She used to fry them—they turn out great that way—or you can bake them. For just a couple of bucks, you get a delicious dish.

Ingredients

  1. 7 ozcooked rice (about 1 cup; 200 grams)
  2. 1egg
  3. 3 tablespoonsflour (about 24 grams)
  4. 2 tablespoonsmilk (about 30 ml)
  5. as neededScallions,
  6. as neededOil for frying,
  7. Salt, pepper, and oregano
  8. 1.75 ozgrated cheese (about 1/2 cup; 50 grams)

Steps

  1. 1

    Place the rice in a bowl and season it. Add the egg, flour, and milk. Mix well until the mixture is smooth and uniform.

    Chop some fresh scallion greens to add to the mixture.

    Heat a little oil in a skillet, just enough to cover the bottom, and cook the fritters there.

    Ready to eat! They turned out very tasty and can be served with a salad, as an appetizer, or as a snack.
