A super simple seasonal tart, perfect for and effortless lunch or a light dinner, and it’s ready in less than an hour.

Preheat the oven to 180 degrees c. Place the prepared beetroot on a baking tray. Coat in 1 tbsp oil and season. Roast for 30 minutes or until soft, turning half way through.

Roll out the pastry. Score a boarder around the pastry sheet and pierce holes in the inner section (this stops it puffing up when cooking). Spread onion jam over the inner section. Then spread the beetroot, pepper, onion and optional chilli flakes, evenly over the inner section. Then sprinkle over 100g feta cheese.

Brush the beaten egg around the pastry boarder and bake in the oven for approx 20 minutes until golden brown. Serve with a salad.
