Energy-saving Air-fryer aubergine, feta and mushroom Roast

I was always sceptical of air fryers, I didn't see what all the fuss was about for two reasons. I thought it does basically what a conventional oven does and secondly, the name air-frier always confuses me. I associate the word frier with deep frying and so this has always put me off trying. Is it just me that thinks this?

But over time observing friends and colleagues using the machine and seeing what other recipes home cooks are using it for on Cookpad I was inspired to give it a try with a recipe from @MALContentKiwi

I was so surprised with the outcome and now see the benefit of the air-frier. It isn't deep frying at all...it is essentially a fan oven that uses less power in a much much quicker time so is energy efficient during these hard economical times. It cuts cooking times down by half in many cases and because it's a small space versus a large conventional oven saves energy. The food turns out great as well.

I will keep experimenting.

Ingredients

  • 1aubergine
  • 1onion
  • 1portabella mushroom
  • seasoning - salt
  • Chilli flakes
  • tamarind sauce
  • 1small block of Feta cheese

Steps

  1. 1

    Slice your Aubergine into thick discs, Spray or lightly coat in olive oil. season well with salt. Add them to your air fryer and roast at 180 for 15 minutes.
    We have an air fry with two compartments so two different things can be cooked at once separately. If you have an air fryer that is only one large component then you could wait till the aubergine has finished cooking and then remove and add your other ingredients to do the second part. Ir if cooking this in a conventional oven then just pla

    Slice your mushroom and onion and add to the air fryer. Sprinkle with a few chilli flakes. Chop your feta cheese into chunky cubes and place on top of the onion and mushroom. Drizzle over a little tamarind sauce. If you don't have tamarind sauce try any other sticky sauce or sticky vinegar. I think sriracha sauce would work great for this. Place in the fryer and roast at 150 for 10 minutes.

    Remove the aubergine from the fryer and put it on a plate. the air fryer makes them crispy and crunchy around the edges and juicy and roasted in the middle. Very gently remove the veg and cheese when they are done and pile them on top of the discs. The cheese will be creamy and soft in the middle but still retain its cube shape. As it cools they will crumble. The onion was sweet and caramelised but still with a little crunch.

    Drizzle over some more tamarind sauce and enjoy! perfect.
