Sheet-Pan Chicken Parmesan

Ingredients

  1. 1large egg
  2. 1/2 cuppanko bread crumbs
  3. 1/2 cupgrated Parmesan cheese
  4. 1/2 tspsalt
  5. 1 tsppepper
  6. 1 tspgarlic powder
  7. 1 tspItalian seasoning
  8. 4 (6 ounce)chicken breast halves. (I used a pkg of chicken tenders)
  9. 3medium size baking potatoes, washed and diced
  10. Olive oil cooking spray
  11. 4 cupsbroccoli florets
  12. 1/2red onion chopped
  13. Sliced pepperoni (optional)
  14. 1 cupmarinara sauce
  15. 1 cupshredded mozzarella cheese
  16. 1/4 cupminced fresh basil, optional

Cooking Instructions

    Preheat oven to 400 degrees Fahrenheit. Lightly coat a 15x10x1 inch baking sheet with cooking spray.

    In a shallow bowl, whisk egg. In a separate shallow bowl, stir together the next 6 ingredients. Dip chicken breast in egg; allow excess to drip off. Dip in crumb mixture, patting to help coating adhere. Repeat with remaining chicken Place chicken breasts in center third of baking pan. Spritz with cooking spray.

    Place diced potatoes on one end of pan. Season if you like and spritz with cooking spray.

    Bake 15 minutes. Remove from oven. Spread broccoli and red onion in a single layer on empty end of cooking sheet. Return to oven and bake 10 minutes more.

    Preheat broiler. I placed a slice of pepperoni on each chicken tender.
    Spread marinara sauce over chicken; top with shredded cheese.
    Broil chicken and broccoli 3-4 inches from heat until cheese is golden brown and vegetables are tender 3-5 minutes. If desired sprinkle with basil.
