Caramelised onion grilled cheese

Currently living in Launceston, Tasmania and just happened to come across a bag of organic brown onions for $1 at Coles, which I made into a tub of caramelised onions. Also snagged some smoked mushroom butter from the farmer's market which is *amazing*, Ashgrove Farm aged cheddar, and some white sourdough too, so I'm using local ingredients for this grilled cheese.

Caramelised onion grilled cheese

Ingredients

  1. 2-3 tbspcaramelised onions
  2. 2 slicescheddar, various brands
  3. Perfect Italiano Mexican style cheese mix
  4. 1-2 tbspsalted butter, to melt
  5. (opt) Hillwood Fresh Co. smoked mushroom butter
  6. 2 slicessourdough bread, 1cm thick

Cooking Instructions

    Toast the 2 slices of sourdough if frozen

    Assemble cheese, caramelised onions and smoked mushroom butter on a plate

  3. 3

    Melt salted butter on a pan and spread. Press sourdough slices down and slide around to absorb the butter.

    On one toast, add all the cheeses. On the other slice, spread smoked mushroom butter and lay caramelised onions on top.

    On a low heat, cover pan with lid to melt the cheese.

    Flip the slice with caramelised onions onto the cheese slice and press lightly to adhere together. Place onto parchment paper to avoid greasy fingers. Slice into 2 halves for easier consumption (crust may be harder to bite through) or sharing.
