Alhumdulilah I made Afghani Pulao perfect in taste , its my family’s all time favorite  , since long am missing that nice taste in local restaurant of Afghani Pulao which it had in 90s , so I tried my own and made successfully , my family liked it very much &  enjoyed it a lot , so am sharing with you all my sisters .

Afghani Beef Pulao

Ingredients

1 hr 30 minutes
6 servings
  1. 1 kgsaila rice (wash & soak for 1 hour)
  2. 1 kg Beef chopped in big chunks
  3. 1 & 1/2 litres beef broth
  4. spices
  5. 4 tspSalt if theres salt in beef broth then adjust accordingly
  6. 1 tspwhole black pepper
  7. 2cinnamon stick
  8. 2 tspwhole cumin seeds
  9. 4whole Green cardamom
  10. for caramel
  11. 1/2 cupCooking oil
  12. 2 tbspSugar
  13. for toping
  14. 1/2 kgCarrots (cut in 3 inches long strips)
  15. 1 cupRaisins
  16. 3Sugar
  17. 1/2 cupWater
  18. 2 tbspCooking Oil

Cooking Instructions

1 hr 30 minutes

    Boil beef as you normally do. Separate beef pieces n stock  .
    Take 1 & half liter of beef stock keep a  side  will use it for cooking rice. Roast beef pieces in hot oil  (deep fry) and keep a side.
    Soak rice for 1 hour.

    Grind the spices except salt

    STEP 2
    Put carrots, raisins, 3 tbsp sugar, 2 tbsp oil, 1/2 cup water in a pot mix n cook on low flame, stir in between cook till carrots tender, dry out all water, its done.

    Pour 1/2 cup oil in a pot in which you are   cooking one kg rice, add sugar turn on flame, caramelize sugar, then pour 1& 1/2 liter beef stock over this caramel, let it boil.

    As it boil now add soaked rice (drain all water from rice in which it was soaked). Add the ground spices, salt. Mix n cover the lid cook till rice done n all stock dries.

    Now turn flame to very low,  add that roasted beef in center of rice, cover the lid in kitchen towel and put it on pot  keep any heavy weight on the lid so steam don’t come out,  now  leave for 10 minutes on very low  flame and done.

    DISH OUT 
    Dish out  rice & beef  & pour those carrots & raisins over rice for garnishing, enjoy yummy AFGHANI PULAO.
