Carrot Muffins

First, Preheat the oven to 175 °c for 10 minutes. Line muffin tray with liners. Sieve all the dry ingredients except sugar.

Then combine curd, oil, sugar, vanilla, and beat till creamy. Fold in the dry ingredients in batches along with milk to make a smooth batter. Fold in the carrots gratings, food colour, essence and pipe in molds upto 3/4 th.

Tap well. Bake for 20 to 25 minutes. Do the toothpick taste to check doneness.

Remove from oven and cover with a kitchen towel till the muffins are cooled.

Garnish with orange colored whipped cream by piping florets on top.

Top with marzipan carrots, tutti fruity and serve!
